First Course

and marcona almonds

Young lettuces, sherry vinaigrette, heirloom carrots

Hearts of romaine salad, creamy Parmesan dressing, and garlic croutons

Onion-brioche soup, one-hour egg, Idiazabal cheese

Second Course

Sake-cured salmon, radish and scallions, white soy

Crispy duck confit, cannelini bean cassoulet, Spanish chorizo

Seared scallops, Fava beans, baby carrots, and orange vinaigrette**

Dungeness crab and cucumber canneloni,
avocado purée, and roasted tomatoes

Main Course

Seared Bigeye tuna, sushi rice cake, pickled peppers, Thai coconut broth

Wild King Salmon, green garlic and
fingerling potato hash, vadouvan butter

Local Halibut, carrot risotto, English pea nage, and celery hearts

Pork loin, asparagus and prunes in brown butter,
Provençal olives, and Parmesan

Roasted New York strip, crème fraîche potatoes,
spring onions, and black trumpet mushrooms**

Chicken breast, artichoke purée,
roasted maitake mushrooms, and melted leeks

Dessert

Warm chocolate fondant, liquid caramel, and fleur de sel

Espresso pot de crème, brûléed meringue, and chocolate-walnut biscotti

Spring fruit tart, pastry cream, and raspberry panna cotta
